Serves 2 Ingredients 350g lean beef strips suitable for stir-frying e.g. rump steak, cut into thin strips or beef stir-fry strips ½ tsp Chinese 5-spice Low-calorie cooking spray ½ red pepper, deseeded and sliced ½ green pepper, deseeded and sliced 1 red chilli, deseeded and finely sliced 3 garlic cloves, peeled and crushed 2 tbsp dark soy sauce 1 tbsp rice vinegar 1 tsp white granulated sweetener ½ tsp ground ginger ½ tsp chilli powder 2 spring onions, trimmed and thinly sliced To serve 50g basmati rice per portion or 50g nest of egg noodles per portion, both cooked per packet instructions 1. Put the beef strips on a plate and sprinkle over the Chinese 5-spice. Toss to coat. 2. Spray a frying pan or wok with cooking spray and place over a medium heat. Add the beef and fry for 4–5 minutes until browned on all sides. Transfer to a plate and set aside. 3. Add the peppers, chilli and garlic to the pan and fry for 2 minutes. 4. Combine the soy sauce, rice vinegar, sweetener, ginger and chilli powder in a bowl, then add to the pan and stir for 1 minute to coat the vegetables. Return the beef to the pan and cook for 1 minute more until heated through. 5. Sprinkle with the sliced spring onions and serve with basmati rice or egg noodles.
