Although it may be tempting to reach for a chilled glass of Aperol Spritz or a classic Pimm’s to cope with the warmer weather, it’s time to take things to another level with a boozy ice lolly. Not only are alcoholic ice lollies delicious, but they’re a refreshing treat that certainly pack a punch. With that in mind, OK!’s Victoria Gray is on hand with a mouthwatering cherry flavoured gin ice lolly recipe, meaning you don’t even have to search the shop shelves for the last remaining frozen snack. It’s a win-win! Grown-up Black Cherry and Gin Ice Lollies MAKES FOUR

Ingredients 50ml gin 50ml black cherry liqueur A splash of tonic water Method Add your ingredients to a suitable bowl or jug and stir together. Pour the mixture into some ice lolly moulds and freeze for an hour. Take the moulds out of the freezer and add in some wooden lolly sticks. Return to the freezer for another couple of hours until completely frozen. Enjoy! And with cherry season typically spanning from June to September, why not try some other recipes that are sweet, sour and wonderfully tart? With their bittersweet flavour, cherries are a versatile ingredient and find themselves a perfect addition to a variety of dishes, including as a standalone cocktail and a refreshing ice lolly. Ingredients 50ml gin 25ml Cointreau Juice of 1⁄2 a lime 50ml sour cherry cordial/syrup 1 dash Angostura bitters Handful of ice cubes Sparkling water Edible flowers, to garnish Method Add the gin, Cointreau, lime juice, cherry cordial, Angostura bitters and a couple of ice cubes to a cocktail shaker. Shake for 2-3 minutes, until well combined. Pour into glasses and add the remaining ice cubes. Top up the glasses with a splash of sparkling water and garnish each drink with an edible flower, if using. Cherry and cranberry ice lollies MAKES FOUR

Ingredients 100g frozen cherries 75ml cranberry juice Juice of 1⁄2 a lime Method Combine the cherries, cranberry juice and lime juice in a blender and blitz until smooth. Pour into 4 lolly moulds and add wooden lolly sticks. Freeze for 4 hours, or until set.
