INGREDIENTS 250g wheel of Camembert 1 tbsp sugar A pinch of salt Peter’s Yard Fig And Spelt Sourdough Crackers, for serving EQUIPMENT Cooking torch (optional) 1. Preheat your oven to 180°C/160°C fan/gas mark 4. Unwrap the wheel of Camembert and place it in a suitable oven-proof dish. Slide the dish into the preheated oven and bake the cheese for approximately 10 minutes. This gentle warmth will soften the cheese and prepare it for caramelisation. 2. Remove the cheese from the oven and, if you prefer grilling, switch your oven to the grill setting. Alternatively, for a more dramatic effect, you can use a cooking torch to caramelise the sugar (in the next step). 3. Sprinkle the top of the Camembert with the sugar, evenly coating the surface. Add a pinch of salt over the sugar, creating an exquisite balance of sweet and savoury that will elevate the flavour profile. 4. Return the cheese to the oven under the grill setting. Watch closely as the sugar begins to caramelise. This process should only take a few minutes, so watch it carefully to achieve the perfect level of caramelisation. If you have chosen to use a cooking torch, carefully aim the flame at the sugar-covered surface of the cheese. Move the cooking torch in circular motions, allowing the sugar to melt and caramelise until a golden crust forms. 5. Allow the Camembert to cool slightly before serving, as the cheese will firm up a bit as it cools. Present this on a serving platter, accompanied by Peter’s Yard Fig And Spelt Sourdough Crackers for a delightful combination of flavours and textures. 6.
