Ingredients Store-bought blinis 75g sour cream Fresh chives, chopped Cucumber, diced A pack of fresh crayfish Caviar Fresh dill Method Lay out 15 blinis allowing plenty of space to load them with toppings. In a small bowl, mix the sour cream with chopped chives – some diced cucumber works well in here too – and set aside. Ensure the crayfish pieces are cut into small chunks to make bite-sized portions. Carefully layer on some of the sour cream topping, creating a small peak on each blini, then add a couple of pieces of crayfish to one side. Gently spoon on a tiny amount of caviar, adding a pop of salty flavour, before topping off with a sprig of fresh dill for colour and scent. Tip: Prawns, which might be more readily available to buy in-store, make an excellent alternative to crayfish. Smoked salmon on rye These canapés are salty, smoky and creamy – ideal with a glass of something crisp and white Serves 12 -25

Ingredients Dark rye bread 200g cream cheese 150g smoked salmon Fresh cucumber, cut into ribbons Fresh dill Fresh black pepper Method Choose a dark rye bread, preferably with sunflower seeds for crunch, and cut into small triangles. Leave some larger slices for hungrier guests. Lightly toast then spread generously with cream cheese. Cut the smoked salmon into strips and gently fold them loosely on top of the cheese. Garnish with ribbons of fresh cucumber, fresh dill, which is especially delicious and in season now, and a grinding of fresh black pepper. Tip: Try ribbons of sweet carrot instead of smoked salmon to create a similar, but vegetarian, colour palette. Fig, goat’s cheese and honey crackers These little beauties melt in the mouth and pair beautifully with a glass of something fizzy Serves 8 – 12

Ingredients Seeded crackers 2 tsp olive oil 150g soft goat’s cheese 8-10 figs Smooth honey Fresh mint leaves Method Lay out around 10 crackers of your choice. Try multigrain or seeded varieties for added crunch. Lightly spread a layer of olive oil over the crackers and liberally apply the soft goat’s cheese. Don’t be too careful here – the perfection lies in the rough splodging. Cut your figs into quarters then assemble the quarters on top of the creamy cheese and drizzle liberally with thick honey. Decorate with fresh mint leaves and serve. Tip: Try switching goat’s cheese for a flavoured cream cheese.
