Ingredients (You will need a silicone mould and paper lolly sticks) ● 200g of the chocolate of your choice (dark or milk) ● A couple of drops of natural raspberry essence (to taste) ● 3 tbsp freeze-dried raspberry pieces Method Break up the chocolate and place it in a clean, dry, heatproof bowl Place the bowl on top of a saucepan of simmering water (but don’t let it touch the water) and allow the chocolate to melt gently. Once it’s melted, stir in the raspberry essence until fully combined. Sprinkle a pinch of the freeze-dried raspberry pieces into the silicone moulds and add the lolly sticks. Remove the chocolate from the heat and carefully pour into the moulds. Place in the fridge to set for 1 hour. Once set, gently remove from the silicone moulds and serve. Chocolate fudge cake

Ingredients ● 175g softened unsalted butter ● 175g golden caster sugar ● 3 eggs ● 3 tbsp golden syrup ● 175g self-raising flour ● 50g cocoa powder ● Pinch of sea salt For the icing: ● 225g butter, chilled and cut into small pieces ● 225g dark chocolate, broken into pieces ● 60g dark muscovado sugar ● 5 tbsp evaporated milk ● 1 tsp vanilla extract ● Edible flowers to decorate (optional) Method Preheat the oven to 180°C/160°C fan/gas mark 4. Grease and line the bases of two 20cm sandwich tins. Place the butter and caster sugar into a large mixing bowl and beat together until light and fluffy. Gradually beat in the eggs. Stir in the golden syrup. Sift the self-raising flour, cocoa powder and salt into a separate bowl, then fold them into the batter until you have a smooth consistency. Spoon the mixture into the tins and bake in the oven for 30-35 minutes or until springy to the touch and a skewer inserted into the centre comes out clean. Leave the cakes in the tins for 5 minutes. Turn out onto wire racks to cool completely. Then, to make the icing, place the butter, chocolate, sugar, evaporated milk and vanilla extract into a heavy-based saucepan. Heat gently, stirring continually until melted. Once melted, fully combined and of a glossy consistency, pour into a clean bowl and cool. Cover and chill in the fridge for 1 hour or until spreadable. When the cakes are completely cool, sandwich them together with half the icing. Spread the remaining icing over the top with a palette knife. Decorate with edible flowers if using. Method Rinse and pat dry the strawberries. Using a small sharp knife remove the stem from the strawberry with a horizontal cut. At the top center of the strawberry, cut a small V to create a heart shape. Repeat until all ten are done. Set aside. Break up the chocolate into pieces and place it in a clean, dry, heat proof bowl. Place the bowl on top of a saucepan of simmering water (but don’t let the bowl touch the water) and allow it to melt gently. Once it’s melted, stir in the chilli flakes and a pinch of sea salt. Stir to fully combine.
