How to make a vegan pumpkin spice latte Starbucks’ traditional Pumpkin Spice Latte only became partially vegan-friendly in 2018, when they introduced a vegan syrup. They added a vegan whipped cream to the menu last year, and they’ve introduced a fully vegan PSL with nut milk in 2021. Here’s how you can make one at home. Ingredients: Water (1/4 cup) Coconut blossom sugar (1/2 cup) Coconut milk (7oz) Pumpkin spice mix (2 tsp) Pumpkin puree (1/2 cup) 1 cinnamon stick 1 vanilla pod Espresso (1 shot) Vegan whipped cream Method: Firstly, you’ll need to create your pumpkin spice syrup. Start by adding a quarter of a cup of water and half a cup of coconut blossom sugar to a small pot and bring it to a boil. Continue stirring and let it cook for approximately one minute.

Next add seven ounces of coconut milk, two teaspoons of pumpkin spice mix, half a cup of pumpkin puree, one cinnamon stick and one vanilla pod to the pot. Stir your mixture for one minute and then turn the heat down low and let it simmer for another minute or two before setting to one side. To make your coffee, add this syrup to your foamed coconut milk before adding in a shot of espresso. Top it off with your choice of vegan whipped cream.
