How to use your Air Fryer: 10 incredible things you can cook in your new appliance
Ingredients (serves 4) 1 tbsp vegetable oil 1 red onion, chopped 1 tsp ground cumin 1 tsp chilli powder 400g tin red kidney beans, drained and rinsed 400g tin cannellini beans, drained and rinsed 1 corn on the cob, kernels removed 250g frozen diced butternut squash 400g tin chopped tomatoes 2 tbsp tomato ketchup 260g spinach 100g tortilla chips, roughly crushed Method Heat the oil in a large saucepan and fry the onion for 3-4 minutes, add the spices and then the beans, corn kernels and squash, and fry for 1-2 minutes. Stir in the tomatoes, with half a tin of water and the ketchup. Bring to the boil, cover and simmer for 15 minutes, stirring occasionally. Add the spinach and stir until wilted. Transfer to a heatproof serving dish, sprinkle with crushed tortilla chips and grill for 1-2 minutes. Cost to make: £1.25 per serving Kale and carrot spelt pilaf
Kale and carrot spelt pilaf is a tasty plant-based option
Ingredients (serves 4) 1 tbsp vegetable oil 1 red onion, chopped or finely sliced 2 carrots, sliced 1 tbsp curry powder 250g spelt 800ml vegetable stock 50g sultanas 250g kale Salt and pepper Coriander to garnish Method Heat the oil in a large saucepan and fry the onion and carrots together for 5 minutes. Stir in the curry powder and cook for a further minute. Add the spelt and then pour in the vegetable stock and mix in the sultanas. Bring the liquid to the boil and simmer for 15 minutes, stirring occasionally. Add the kale and cook for a further 5 minutes. Season with salt and pepper to taste. Sprinkle with chopped coriander and serve. Cost to make £1.05 per serving Spicy spinach fried rice
Spicy spinach fried rice works both as a main meal or as a side dish
Ingredients (serves 2 as a main or 4 as a side dish) 200g long grain rice 1 tbsp toasted sesame oil 1 leek, chopped 1 corn on the cob, kernels removed 1 tsp cumin seeds 1⁄4 tsp chilli flakes 260g spinach Salt and pepper Method Cook the rice in boiling salted water for 15-18 minutes until tender. Drain well. Meanwhile, heat the oil in a large frying pan and fry the leek and corn for 5 minutes. Add the cumin, chilli flakes and cooked rice and fry for 1-2 minutes. Stir in the spinach and stir until just wilted, then season to taste.
