Iconic ice cream brand Ben & Jerry’s, the company that bought you the delicious Phish Food and Chocolate Fudge Brownie flavour, have given us scoops of information on how actually to place your ice cream in the freezer. This is to avoid “freezer burn”, which are those watery ice crystals that cover the dessert after it has been re-frozen. The company explain that this happens because moisture leaves the body of ice cream and “joins forces with the natural air” before eventually refreezing on the surface. You can decrease the chance of this happening by minimising the time that the tub spends outside of the freezer.

However, Ben & Jerry’s recommend the upside down method, explaining: “This trick is a little risky (and potentially messy), so ensure you have a tightly fitting lid before attempting. “Ok, ready? Flip your partially melted pint upside down before refreezing. “This causes the melted ice cream to drip onto the lid where it has less chance of ruining the still-cold portion.”

The brand also explain that the optimum temperature for storing ice cream is below freezing, saying: “Keeping ice cream really cold at all times until it is served is key. “If you want your pint to soften up a bit before eating, leave it on the counter for a few minutes rather than using the microwave, which zaps the ice cream’s delicate structure.”Hmmm… this is making us want to go and stock up our freezer!Story SavedYou can find this story in My Bookmarks.Or by navigating to the user icon in the top right.Follow OK!
