Darren McGrady, a former royal chef, has often given us a glimpse into his 15-year stint in the royal kitchens. He started his career at the Savoy Hotel in London and cooked for everyone from the late Queen to Diana, Princess of Wales, and even Prince William. Darren revealed Prince William and Prince Harry’s childhood favourite foods via his YouTube channel. While you might expect the young royals to have a penchant for something like ice cream or chocolate, it turns out their top pick was actually banana flan. This “super easy dessert” is a delightful combination of banana custard nestled in a pastry shell, crowned with chopped bananas and a glaze of apricot jelly.

In his video, Darren said: “You can’t send rose petal panna cotta with lavender shortbread up to a five-year-old Prince William, can you? He doesn’t have that sort of palette yet.” He went on to share how the banana flan became a hit with the princes, who would eagerly pop into the kitchen after school to check what’s cooking. “Whenever the boys were home, Princess Diana would write banana flan in the menu book. And then she’d write H or W at the top to let me know who was coming,” Darren reminisces. “The boys would come back from school on a Friday to Kensington Palace and come in the kitchen, ‘What’s for dinner, Darren? ‘ They’d see the banana flan on the side and say, ‘Yes!'”

And for those eager to whip up this royal treat, Darren even offers a nifty trick for the perfect custard, hinting that cornstarch is the secret ingredient for saving time. He explained: “The great thing about using cornstarch in this is that once that liquid gets hot enough to open up the cornstarch granules, then it starts to thicken automatically.” To top off the dessert, he recommended arranging the bananas atop the tart from the edge, ensuring they overlap. After completing the enticing pattern, the royal chef shared his tip for the finishing glaze. “The glaze is to give it some sweetness but also to protect those bananas so they don’t go all brown and nasty,” he quipped.

However, it’s not just banana flan that tickles Prince Williams fancy. Similar to his sweet-toothed grandmother, the late Queen, who was dubbed a ‘chocoholic’ by an ex-royal cook, it’s evident William shares this fondness. His chocolate cravings were hilariously revealed in a video chat with kids. Kate let slip that William was gobbling up all their Easter chocolate, jokingly scolding him as they sent out Easter wishes.
