Ingredients / Makes 2 2 large handfuls of spinach (including stems) ½ cucumber Juice of 1 lemon 2 apples (like Granny Smith) 4 large celery stalks Handful of blueberries (plus a couple to garnish) 1 tbsp matcha powder 1 tbsp of mixed seeds 4 Mint leaves (optional) Method Begin by washing your vegetables and fruit. Add everything apart from the mixed seeds to a blender. Whiz together, until smooth and fully blended. Meanwhile add 200 ml of boiling water to the matcha powder and whisk. Allow to cool. Add the cold, whisked matcha to the blender and blend for another 30 seconds until combined. Poor into glasses and garnish with the seeds, a couple of blueberries and the mint leaves if using.

Broccoli and spinach soup, with toasted seeds and sour cream
Spinach is high in potassium, magnesium and calcium, which help regulate stress hormones
Ingredients / Makes 2 1 tbsp olive oil 2 garlic cloves, sliced Thumb-sized piece of ginger, sliced ½ tsp coriander seeds ½ tsp ground turmeric 100g courgettes, roughly sliced 500ml vegetable stock 100g broccoli, chopped into florets 100g baby leaf spinach 1 lime, zested and juiced Small handful parsley, roughly chopped, reserving a few whole leaves to serve 1 tbsp toasted mixed seeds 1 tbsp pumpkin seeds 2 tbsp sour cream, to serve (optional) Sea salt and freshly ground pepper to taste Method Put the oil in a deep pan, add the garlic, ginger, coriander seeds and turmeric and fry on a medium heat for 1 minute. Add the courgettes, making sure to coat the slices in all the spices, and continue cooking for 3 minutes. Add the stock and simmer for a few minutes. Add the broccoli, spinach and lime juice. Simmer for 8-10 minutes until all the veg is soft. Take off the heat and add the chopped parsley. Pour into a blender and whizz until smooth. Garnish with lime zest, parsley and seeds and a dollop of sour cream. Dark chocolate and pistachio medals

Ingredients / Makes 15 150g dark chocolate (at least 70% cacao), chopped A little coconut oil for greasing 75g roughly chopped pistachios, de-shelled A few pinches of flaky sea salt (optional) Method Grease a silicone sweet mould with a little coconut oil. Add about 3cm of water to a medium saucepan and bring to a gentle simmer. Place a heat-safe bowl on top of the pot so that the bottom of the bowl is not touching the water. Add the chopped chocolate to the bowl and stir occasionally with a spatula until smooth and melted. Pour the chocolate into the silicon sweet moulds. Immediately sprinkle the pistachios over the still-warm chocolate. Sprinkle a few pinches of flaky sea salt over everything, if desired. Allow to set for a few minutes and then add to the freezer for 1 hr. Remove and pop out the moulds and serve. Mackerel with lime and chilli

Ingredients / Serves 2 1 tsp of olive oil 2 large mackerel fillets For the marinade 2 tbsp soy sauce Juice of 1 lime 1 tsp sweet chilli sauce 1 tbsp honey 1 garlic clove, crushed to a purée 2 finely sliced spring onions 1 tsp chilli flakes To serve A large handful of dressed lettuce leaves Method Mix all the marinade ingredients, then pour over the fish. Set aside to marinade for at least an hour. Add the olive oil to a large frying pan on a medium heat. Pan fry the fillets, basting two or three times with any excess marinade, until the flesh begins to flake and the fish is cooked. Serve with the pan juices and the dressed salad leaves.
