Serves 4 ● 250ml dry cider ● 100g honey ● 1 tbsp stem-ginger syrup ● Juice and zest of 1 orange ● Juice and zest of 1 lemon ● 150g dates ● 100g pecans ● 100g sultanas ● ½ tsp ground mixed spice ● 2 tbsp diced stem ginger ● 4 red apples 1. Preheat the oven to 160ºC/140ºC fan/gas mark 2½ and line a baking tray with parchment paper. 2. Place the cider, honey, ginger syrup and orange and lemon juices in a saucepan on the hob. Bring to a boil and simmer for 5 minutes. 3. Chop the dates and pecans. Mix them in a large bowl, together with the sultanas, mixed spice, diced stem ginger, and lemon and orange zest. 4. Cut through each apple horizontally, slicing off the top section of each to create a “lid”. 5. Cut the core from each piece of apple, also removing some flesh to create a hole into which you will be placing the spiced fruit mixture. Dunk the tops and bottoms of the apples in the cider syrup. 6. Spoon the fruit mixture into the holes in the apple centres, pushing it down well to fill the apple completely. 7. Bake for 35-45 minutes or until soft and golden. 8. Reduce the syrup in a pan over a medium heat until it is sticky, spoon over the apples and then serve Sunken apple drizzle cake
Spicy apple cake is the perfect warming treat

Serves 12 ● Juice of 1 lemon ● 2 tbsp caster sugar ● 3 Braeburn apples ● 25g butter, at room temperature ● 100g golden caster sugar ● 70g honey ● 3 large eggs ● 160g plain flour ● Pinch of salt ● 2 tsp baking powder For the syrup ● 100g honey ● 100ml apple juice 1. Preheat the oven to 170ºC/150ºC fan/gas mark 3 and line a spring-form cake tin with baking paper. 2. Mix the lemon juice and 2 tablespoons of caster sugar in a bowl. Core and cut each apple into thin wedges, then place in the sugary juice. 3. Cream the butter and golden caster sugar until light and pale. Whisk in the honey, then an egg at a time, to fully combine. 4. Sift in the flour, salt and baking powder, then fold to form a smooth batter. 5. Spoon into the tin and place the apple wedges evenly around the top. Bake for 35 to 40 minutes. 6. Simmer the honey and apple juice for 3 minutes. Remove the cake from the oven. Make holes all over it with a skewer and drizzle over the syrup. 7. Leave the cake in the tin for 5 minutes then turn out and leave to cool a little. Spiced apple & blackberry crumble

Serves 8 ● 75g light brown sugar ● 1 tsp ground cinnamon ● Pinch of ground cloves ● Pinch of nutmeg ● Juice of 1 lime ● 250g blackberries ● 4 Bramley apples ● 2 Cox apples For the crumble topping ● 100g demerara sugar ● 70g butter ● 160g self-raising flour ● A handful of oats and seeds 1. Preheat the oven to 180ºC/160ºC fan/gas mark 4. Mix the brown sugar, cinnamon, cloves, nutmeg, lime juice and blackberries in a bowl. 2. Core the Bramleys, cut into 12 wedges and add to the bowl. Peel, core and dice the Cox apples and mix with the Bramleys. Tip into a suitable baking dish. 3. For the topping, blend the demerara sugar, butter and flour in a food processor, to form a breadcrumb texture. 4. Mix the oats and seeds with the crumble topping. Sprinkle over the apples and push down lightly to flatten a little. Gently drag a fork over the crumble to give texture to the surface. 5. Bake for 30 to 35 minutes or until golden brown, then serve with custard if desired.
