Ingredients 400g Co-op ready-rolled puff pastry 1 egg, beaten 4 Co-op Irresistible Air Dry Cured Unsmoked Back Bacon rashers 150g Président French Brie 6 tbsp cranberry sauce Method Preheat the oven to 200°C/180°C fan/ gas mark 6. Line an oven tray with baking parchment. Unroll the pastry and brush with the beaten egg. Cut the pastry into 36 or 40 small rectangles. Place one rectangle on top of another. Repeat the process until you have 18 or 20 double-pastry rectangles. Bake for 10 minutes until risen and golden. Meanwhile, fry the bacon until it is crisp. Remove it from the pan and slice into small pieces. Cut the Brie into small slices. Add a small blob of cranberry sauce to each vol-au-vent and top with a slice of Brie and a piece of bacon. Place back in the oven for 1 or 2 minutes until the cheese has melted. Serve. Ingredients 400g Co-op ready-rolled pizza dough 100g Co-op Italian Tomato & Garlic Pasta Sauce 50g Co-op Italian mozzarella Green olives, sliced 100g Co-op sundried tomatoes Basil leaves, to serve Method Preheat the oven to 200°C/180°C fan/gas mark 6. Unroll the pizza dough and stamp out 14 or 16 5cm to 7cm discs. A glass tumbler is about the right size and makes a good cutter. Lay the discs of dough on a parchment-lined baking sheet. Spoon some of the pasta sauce over each disc, then add some mozzarella, olive slices and the tomatoes. Bake for 10-15 minutes until the pizza crust is golden and the cheese is bubbling. Scatter with a few basil leaves before serving.
