Makes 4-6 Ingredients ● 2 x 500g packs of Co-op Irresistible Clementines, juiced, plus an extra one to decorate ● 2 tbsp white caster sugar ● 50ml water ● ½ lemon, juiced ● 200ml Co-op Irresistible Prosecco 1. Strain the clementine juice through a sieve into a large mixing bowl. 2. In a separate small bowl, dissolve the sugar in the water, then pour into the juice. 3. Stir in the lemon juice and prosecco. 4. Pour into a container. Leave in the freezer for at least 8 hours, stirring with a fork every couple of hours to break into shavings, until set. 5.
