Ingredients ½ red onion, finely sliced 100g cherry tomatoes, halved 70g sugar snaps, halved lengthways ½ under-ripe mango, peeled and chopped 150g cooked prawns 50g salted peanuts, crushed 2 x 250g pouches of microwave jasmine rice Salt and pepper For the dressing 1 tbsp mango chutney 1 tbsp fish sauce 2 tbsp olive oil 1 tbsp sweet chilli sauce Juice of ½ lime

Method Whisk together all the dressing ingredients, then portion into two containers. Mix together the onion, tomatoes, sugar snaps, mango, prawns and peanuts, then divide into 2 sealable containers. At work, microwave the rice according to the packet instructions, then tip into a bowl of the salad. Season to taste, pour over a container of the dressing and stir well to combine.
