Privacy NoticeIt’s the kitchen gadget that most families can’t live without these days – the humble air fryer. The appliance’s popularity is still on the rise, so it’s little wonder more of us are seeking out the ultimate delicious recipes to wow our guests, save time and pack in the goodness. For those living the gluten-free life, From Gluten Free Air Fryer by Becky Excell shows you everything you need to know about this essential appliance, with a huge variety of practical, delicious gluten-free dishes. Here are a few of our favourites… Chocolate fondants Makes 4 Ingredients 85g butter, plus extra for greasing 135g dark chocolate 100g caster sugar 2 large eggs 25g gluten-free plain flour 10g unsweetened cocoa powder 1. Butter 4 small ovenproof ramekins or 8cm mini pudding moulds. In the microwave, melt together the butter and chocolate in a small bowl, mixing regularly in between short blasts. Allow to cool slightly. 2. Alternatively, add the butter and chocolate to a large heatproof bowl set over a saucepan of gently boiling water, ensuring that the water does not touch the bowl. Stir until everything has melted and mixed together, then allow it to cool slightly. 3. In a large bowl, whisk together the sugar and eggs until slightly frothy, then pour in the slightly cooled melted chocolate mixture and fold in. 4. Fold in the flour and cocoa powder until combined. 5. Heat or preheat the air fryer to 180°C/350°F and pour or spoon the mixture into the prepared ramekins until they are about three-quarters full. 6. Place in the air fryer basket and then air fry for 8 to 10 minutes until the puddings have risen. 7. Carefully remove and invert each out on to a separate serving plate, then serve straight away for the perfect, gooey middle. Serve with a scoop of vanilla ice cream on top, if you like. Sticky banoffee self-saucing puddings

These banoffee puddings are 100% gluten-free

Makes 4 Ingredients 75g dates, pitted and chopped 75ml boiling water 50g butter, softened, plus extra for greasing 50g light brown sugar 1½ large ripe bananas, peeled and mashed 1 large egg 1 tsp vanilla extract 115g gluten-free self-raising flour ¼ tsp xanthan gum For the sauce 100g light brown sugar 100ml double cream 100ml water 1. Soak the dates in the boiling water for about 30 minutes, then blitz using a stick blender to form a paste. 2. Butter 4 mini rectangular dishes that comfortably fit into your air fryer. 3. In a large bowl, beat together the butter and sugar until light and fluffy. Add in the mashed banana, egg and vanilla extract. 4. Mix together until well combined, then fold through the flour, xanthan gum and date paste. 5. For the sauce, heat the sugar, cream and water in a small saucepan over a medium heat, until just boiling and the sugar has dissolved. 6. Spoon the sponge mixture into the prepared dishes and carefully pour the sauce on top. 7. Heat or preheat the air fryer to 180°C/350°F. Place as many dishes into the air fryer as will comfortably fit and air fry for 12 to 15 minutes until golden and the top is cooked – a little of the sauce might come bubbling through. 8. Leave to cool for a few minutes before serving with ice cream. Fudgiest chocolate chip brownies

Makes 9 or 16 Ingredients 85g butter 100g dark chocolate 2 large eggs 130g caster sugar 50g gluten-free plain flour 30g unsweetened cocoa powder, sifted ¼ tsp xanthan gum 60g milk chocolate chips 1. Add the butter and chocolate to a large heatproof bowl and place over a saucepan of gently boiling water, making sure the water isn’t touching the bowl. Stir until melted and mixed. Allow to cool to near room temperature. (Or melt the butter and chocolate in the microwave in short bursts, stirring in between.) 2. In a large bowl, whisk the eggs and sugar until lighter in colour (use an electric hand whisk or a stand mixer). Pour the cooled chocolate mixture into the egg and sugar mixture and carefully fold it in with a spatula until glossy and chocolatey in colour. 3. Fold in the flour, cocoa powder and xanthan gum until well combined, then fold in the chocolate chips so they are evenly distributed. 4. Heat or preheat the air fryer to 150°C/300°F. Pour the mixture into a container that fits into your air fryer and air fry for around 25 minutes until the top is firm and it no longer wobbles when gently shaken. 5. Remove from the air fryer, allow to cool fully and then pop in the fridge for 2 to 3 hours to firm up and become fudgy. 6. Slice into 9 large or 16 small squares and enjoy cold or warmed up.
